BAKEY WEDNESDAY - MADEIRA CAKE

I love baking and I usually have a little tradition of choosing a recipe from the weeks bake off and challenging myself to make it. Unfortunately due to the lack of time and lots of work going on I haven't been able to squeeze anything in. Until this week!

So finally, I present to you, my first creation - Madeira Cake.






Voila! I actually love how it turned out, especially for a first go and it tasted scrummy!

I cut it around half an inch thick and it made about 12 slices.


If your interested in the recipe I used I've added it below.

Ingredients
175g Butter
175g Caster sugar
Grated shavings of 1 lemon
3 Eggs
115g Plain flour
115g Self raising flour
2-3 tbsp of milk
*Options slices of citron peel

Preheat the oven to 160'/Gas Mark 3 and grease your tin.

Cream together the butter and the sugar until pale and fluffy.
Add the lemon shavings and gradually beat in the eggs.
Sift in the flours and fold gently.
Add in the milk.

Pour the mixture into the tin and smooth level.
*Optional - add slices of citron to top.

Bake for 1-11/4 hours until golden brown and spongy to the touch.

Cool in the tin for 10 minutes then cool completely on a wire rack.

Slice and serve!

    1. I did exactly the same thing!! I was craving it for weeks after watching it! I was actually really surprised how well it turned out! I think Paul Hollywood would of been impressed! :D
