RECIPES - SUNDAY STEW

One of my favourite days of the week is Sunday.

Now, I know some people won't agree but if it wasn't for the dreaded Monday that follows, Sunday would definitely take first place. In my opinion, you can't beat a lazy Sunday followed by a scrummy dinner.


This week, in celebration of the colder weather I've been cooking up my Sunday Stew.
It's a great dish because you make so much you can freeze it or eat it during the week. 
It's cheap and easy to make so it doesn't matter whether your hanging in your halls or cooking for the family.


THINGS YOU NEED:
Stewing Steak - you can use any other sort of beef or meat if you prefer.
Carrots
Parsnips
Suede - You can get a frozen bag from most supermarkets that contains already chopped and frozen stew veg for under £1.
Mushrooms
Potatoes
Onion
Peas - Also available frozen for under £1
Worcester Sauce - Optional
Stock Cubes

WHAT TO DO:

- Slice your beef into small cubes (about the size of you thumb) and chuck into a pan to brown.

- Once brown, add your stock cubes and some boiling water until you fill the bottom on the pan. Add in a little worcester sauce and salt and pepper if desired.


- Once all the stock has dissolved pour into the slow cooker/crock pot on a low heat.

- Chop up all your veg into small chunks and toss into the pot. I like to mix the veg into the same pan as the beef with a bit of boiling water before adding to the pot to get the extra bit of stock from the pan.


- Add everything into the pot and leave for 1-2 hours. Then stir and add additional boiling water if needed. Then leave for a further 2 hours.


And there you have it. Sunday Stew.

I've added dumplings for Kieran as we have them in the cupboard but I like to have mine with some nice crusty bread.
